Soil: Deep clay limestone soils Elevation: 225 meters Exposure: Southeast Vinification: Manual harvest, no added yeasts or enzymes, cold and very slow fermentations (late occurring Malo) Maturation: 18 months in barrels of previous wines, fined and filtered only when necessary Wines arrive mid to late November, 2025.
