2024 Bodegas Cota 45 UBE Paganilla, Andalucia, Spain Lamoresca -From Mosel Fine WinesUBE Paganilla is 100% Palomino from two different plots, one of them on Tosca de Barajuela soil on the top of the hill of Paganillas Pago, and the other on the south corner on Tosca Cerrada soil. Grapes were hand harvested early September and pressed wholecluster into old 1,000 1,250L Jerez botas for spontaneous fermentation without temperature control, where the wine completes aging for 8 months, including 4 months of biological aging under flor.
